Splash in our gazpacho and cold cream
THERE IS NO SUMMER WITHOUT GAZPACHO (OR WITHOUT COLD CREAM) AND, AT THE CAFÉ DE LA ÓPERA, THEY ARE INCORPORATED INTO THEIR SEASONAL MENU WITHIN THEIR SELECTION OF GRANDMOTHER’S DISHES.
A VERY COLOURFUL PROPOSAL THAT OFFERS AVOCADO, STRAWBERRY, WATERMELON OR MANGO GAZPACHO; AND ITS MOST GROUNDBREAKING VERSION WITH A BEETROOT CREAM
If we think of a dish that represents the essence of summer, it is, without a doubt, gazpacho. In its most traditional version, it is made with seasonal tomatoes and extra virgin olive oil. Full of colour (and flavour) and highly refreshing, just like the Platos de la abuela proposal prepared by the chef at El Café de la Ópera (c/ Arrieta, 6) to cool us down -and eat healthily- on hot days.
Four gazpachos made with different bases (and a cold cream) to face the high temperatures from his recently renovated gastrobar, which will be available depending on the market. Tasty and innovative recipes, full of colour, which are added to Platos de la abuela with the following proposals:
Avocado Gazpacho. Traditional gazpacho in which we replace the tomato with ripe avocados and add some pansy petals and a scoop of homemade extra virgin olive oil ice cream.
Strawberry or watermelon gazpacho. Based on a traditional gazpacho, the tomato is replaced by strawberry or watermelon. Garnished with gelled basil oil spheres.
Mango gazpacho. With a traditional gazpacho as a base, a percentage of tomato is replaced by natural mango and decorated with banana chips.
Beetroot cream. Cold beetroot cream with crispy spinach leaves and bitter yoghurt sauce.
Grandmother’s dish between 12 € and 18 € per diner, depending on the market (VAT INCLUDED).
