Traditional Spanish Stew
We call it: cocido madrileño
WITH THE ARRIVAL OF THE COLD WEATHER, THE CAFÉ DE LA ÓPERA BECOMES THE BEST REFUGE ON FRIDAYS, SATURDAYS AND SUNDAYS, AS IT OFFERS, AT MIDDAY, A COMPLETE COCIDO SERVED ACCORDING TO THE MADRILENIAN TRADITION.
THE MENU, SERVED IN THREE COURSES AND WITH AWARD-WINNING CHICKPEAS, INCLUDES SOUP, CHICKPEAS AND VEGETABLES, A SELECTION OF TYPICAL COCIDO MEATS AND FRIED MILK FOR DESSERT..
The cold weather is coming and, with it, the Cocido Madrileño is a must at El Café de la Ópera (c/ Arrieta, 6). A traditional menu with which you can enjoy a delicious stew in three courses, to eat as you like, awarded in 2015 for the quality of its chickpeas.
A gastronomic proposal that starts with the stew croquette, chilli peppers with spring onions and soup with noodles. The Castilian chickpeas and vegetables are served on a tray with tomato sauce with cumin. Accompanied by a careful selection of meats: blood sausage, bacon, bacon, bacon, ribs, Asturian chorizo, black pudding and chicken. And for dessert, fried milk.
Its secret? ‘The slow cooking for more than 48 hours’, says the chef. Available every Friday, Saturday and Sunday. It is served from pot to plate, always with ingredients of the highest quality.
